ALWAYS CUSTOM-MADE CALÇOTADES 2015
The "calçotada" is a typical food of the Western region of Catalonia, but in recent decades it has spread and can be tasted in almost any part of the community and North of Castellón during the end of winter and the early spring.
The calçots are a variety of chives cultivated especially for this purpose that are roasted directly on embers of vine shoots and eaten by hand, seasoned with a special sauce "salvitxada", similar to the romesco sauce. Meanwhile, coals are used for roasting meats or sausages for the main course.
AVAILABLE EACH YEAR IN JANUARY, FEBRUARY AND MARCH.
The typical dates to taste this kind of Sweet Onion is during the wintermonths and the spring, and they are usually served with the best wines of the area.
